Born from a collaboration between Pierre Hermé and American ceramic artist Courtney Mattison, the Nérée log cake appears to have emerged directly from the water. Beneath a chocolate shell echoing the rugged contours of reefs, embellished with Infiniment Noisette praline, the log reveals itself as a dreamy dome of Pure Origin Belize Dark Chocolate, Cayo District, Xibun Plantation. The powerful, tangy aromas of the chocolate are enhanced by the subtle, slightly smoky notes of Nori seaweed, and the tasting experience ends with the fresh, fragrant flavours of yuzu gel.

Piece for 10/12 people.

Storage and consumption advices

 Store in its box in the refrigerator until ready to eat. Cut sufficiently large slices using a knife that has been dipped in hot water and wiped dry..
