At the heart of a light choux pastry with roasted almond pieces, the cream cheese filling reveals a delicately tangy sweetness. The orange and passion fruit compote brings freshness and intensity to the flavours. A Paris-Brest celebrates the luminous combination of cream cheese, orange and passion fruit.
When tasted, the architecture of textures unfolds between the lightness of the choux pastry punctuated by the crunchiness of almond slivers, the enveloping creaminess of the cream cheese buttercream and the vivid contrast of orange and passion fruit jelly. This jelly brings a tangy and aromatic freshness, balancing the richness of the cream and revealing a fruity and sunny expression, while preserving the gourmet harmony of the whole.
The Paris-Brest was created in 1910 by Louis Durand, a pastry chef from Maisons-Laffitte. The creator of the Paris-Brest-Paris cycle race asked him to make a cake in the shape of a bicycle wheel to popularise the sport, which was not yet well known to the general public.
