Pierre Hermé likes seasoning pineapple with a touch of coriander, a little lime zest and a pinch of pepper.  The pastry chef has transformed this aromatic fruit salad into a cake, enriched with coconut in the form of a dacquoise cake and a rich mousseline cream.  An exotic beauty full of flavours.

The coconut flavour in the dacquoise and mousseline cream acts as a seasoning for the pineapple salad. Coriander, lime and Sarawak pepper highlight the fruity, tangy taste of the pineapple. The crunchy, soft texture of the dacquoise biscuit contrasts with the creaminess of the mousseline cream.

Available in individual, 3-4 and 6-8 person formats.
