Pierre Hermé unveils a brand-new creation: the Mogador pain au chocolat. He combines the wonderfully crisp yet soft texture of leavened puff pastry with a melt-in-the-mouth almond paste flavoured with tangy passion fruit and homemade milk chocolate, whose intense yet subtly caramelised notes are a delightful surprise.
