A mysterious dive into the depths of the oceans, corals, anemones and other sea sponges: this is the odyssey that Pierre Hermé invites us to discover with the Abysses collection. Inspired by the works of ceramic artist Courtney Mattison, made from hand-glazed stoneware and porcelain, this infinitely indulgent, decidedly marine Christmas collection is another chapter in the artist's Letter to the Ocean. Her monumental works reveal the incredible biodiversity of the seas, where colours, curves, volumes and textures create a sense of movement, swirl and life. Here, the infinitely large celebrates the infinitely small.

I handcraft each of my sculptures to celebrate the richness and fragility of coral reefs. Collaborating with Pierre Hermé to share my work and translate it, through our exchanges, into a collection of pastries has been a particularly exciting experience.”

The Maison Pierre Hermé Paris has chosen to partner with The Coral Planters, a French association that works to restore coral reefs, create new marine protected areas and raise public awareness of the beauty and fragility of the oceans through a resolutely educational approach.

The Advent calendar charms with its quirky and ephemeral look. With its perfect round shape and vibrant colours, it reveals 24 Infiniment Chocolat creations day after day, much to the delight of chocolate lovers.

Piece created by Courtney Mattison in glazed porcelain, handcrafted and decorated with fine textured cords. To enhance the work, a touch of gold is applied to the reliefs. Limited editions.

Nérée - Pièce d'Exception

Born from a dialogue between the two artists, the Nérée log seems to have emerged straight from the water. Beneath a chocolate shell echoing the jagged contours of reefs, whose swirls are embellished with Infiniment Noisette praline, the log reveals itself, a dreamlike dome of Pure Origin Belize Dark Chocolate, Cayo District, Xibun Plantation. The powerful, tangy aromas of the chocolate are enhanced by the subtle, slightly smoky notes of Nori seaweed, and the tasting experience ends with the fresh, fragrant flavours of yuzu gel.

Pièce d'Exception Infiniment Chocolat

This unique piece is a fantasy, a sculpture taken from the work of Courtney Mattison. It features the dome of the exceptional log in an imposing chocolate sculpture. The chocolate sculptures surrounding it are filled with chocolate bonbons, caramelised hazelnuts, mendiants or Infiniment Noisette praline, then assembled and painted by hand to form an extraordinary reef weighing nearly 12kg! A work of art requiring many hours of work by our artisan chocolatiers.
