From the first intoxicating aromas in the workshop of his father, a pastry chef and chocolate maker in Alsace, to the present day, Pierre Hermé has never stopped learning in order to tame the chocolate material. Uncompromising, capricious, noble, chocolate does not tolerate lack of precision. "I have a fascination for chocolate, which is undoubtedly one of the materials that requires the most mastery and knowledge.

The pastry chef goes in search of exceptional vintages to sublimate the aromatic palette of each origin. From the fermentation of the beans to their roasting, Pierre Hermé likes to follow the evolution of this material to which he gives a texture that is sometimes unctuous, sometimes crunchy or terribly tender. Chocolate cannot be tamed, it must be tamed to create the right taste, the ultimate emotion.

A PASSION FROM CHILDHOOD
The discovery of the book "Praline Passe-Partout", his father's bible, allowed Pierre Hermé to discover the professional world of chocolatiers. He admits to having borrowed this book, never to return it, and devoured it. From this reading, he acquired the first keys to knowledge and the irresistible desire to confront this unique, sensitive, sensual material. A passion that will never leave him.

It is with Gaston Lenôtre and Michel Chaudun that he made his first steps. Learning, knowledge, experimentation, chocolate does not accept compromise. With patience and high standards, Pierre Hermé endeavors to tame the chocolate material.
