Each component is worked in a very different texture: the softness of the financier, the fondant of the crème brûlée and the brioche, the lightness of the cream and the meringue. All the flavors are revealed in a successive and harmonious way: bitterness of the almond and orange peel, sweetness of the orange blossom, sweetness of the fruits and candied citrus. A play of textures and savours where each layer offers its own pleasure. Orange-flavoured financier cake with fresh raspberries welcomes a duo of orange blossom brioche and crème brûlée that tenderly melts in your mouth. A light cream of semi-candied fruit tops the cake and fresh fruits and flowers add the final decorative touch. A grande dame.
