TRACEABILITY AND PERFECTION
All Pierre Hermé Paris coffees come from certified plantations. The coffee cherries are hand-picked when ripe, in different regions of the world, in order to take advantage of the best of their aromas. The beans are then roasted to bring out their full nuances.
OUR SPECIALTY COFFEE
Specialty coffee is a superior quality coffee whose beans have scored above 80/100 in tasting tests conducted by experts from the international Specialty Coffee Association of America.
COFFEE WITH THE PASTRY SKILL REQUIREMENT
As with all ingredients dear to the pastry chef, coffee, after being chosen with the greatest care, must be worked with precision: size of the grind, precise dosage, quality of the water used, temperature of infusion and extraction.
In 2013, after meeting with the founder of the Arbre à café, Pierre Hermé, then in the midst of thinking about the taste of coffee, decided to change the perception of the bean. The coffee, perfectly roasted to sublimate its nuances, became an essential savoir-faire within Pierre Hermé Paris.
THE BARISTA SKILLS
In order to meet the highest standards, it is the baristi who are entrusted with the responsibility of preparing the coffees. Like pastry chefs, they work to the very last bean to grind the coffee to the perfect granulometry, weighing, dosing, and extracting the coffee according to the rules of the art, choosing even the water used to magnify each nuance of this drink.

Pierre Hermé selects each origin for its aromatic notes and imagines his own blends. The exceptional varieties are carefully selected from the coffee plant to the harvest, when they are ripe, and then the time comes to roast them.
