In this reinterpretation of the Saint-Honoré based on blackcurrant, vanilla and violet, Pierre Hermé adds a touch of exuberance to the classic Saint-Honoré. Dressed up in colour, the Saint-Honoré Envie is a delicate combination of an ultra-smooth vanilla mascarpone cream and the well-tuned fruit-flower tandem of a blackcurrant compote embellished with red berries and the scent of violets. All laid out on ultra-crisp puff pastry and surrounded by soft, crunchy choux pastries.
