Pierre Hermé's interpretation of the emblematic entremets of his pastry-making expertise is a tart to bring out the flavour of the caramel. To heighten the contrasts, the cream and whipped cream are enriched with lemon, whose deep, lively flavour hits the roundness of the caramel, the crisp texture of the puff pastry and the crunchiness of the caramel puffs. An infinitely tasty tart where the taste of caramel becomes more intense, and the lemon more vivid.
Available in single, 3-4 and 6-8 person formats.
