Pierre Hermé has created an explosive vegetal tart in which the heat of the Espelette chilli punctuates the almond cream with lime zest, disrupting the acidity and fragrance of the citrus fruit. A very tangy lime jelly completes the flavour of the almond cream, exacerbating the liveliness of the fresh raspberries.
Available in single, 3/4 and 6/8 person formats.
