On a pâte sablée base topped with coffee-imbibed biscuit, the robust yet light taste of Café Iapar Rouge du Brésil, used to flavour the ganache and the Chantilly cream, creates successive impressions of depth and lightness. The palate savours the full aromatic palette of this Grand Cru coffee with its pronounced notes of chocolate, cinnamon, spices and eucalyptus. Die-hard coffee fans will swoon with pleasure.
The tasting experience revolves around the contrast between the richness and creaminess of the ganache and the lightness of the Chantilly cream. The shortbread adds a crunchy texture. Pierre Hermé has reinterpreted the sensation and taste of coffee infusing the Chantilly cream in a Viennese coffee.
Available in Individual, 3/4 persons and 6/8 persons formats.
