This delicate tart pays homage to Pure Origine Brazil chocolate, from the Paineiras plantation, with 64% cocoa, through a play of contrasting textures. The shortcrust pastry, chocolate crisp and nougatine with cocoa bean pieces complement one another, whilst the velvety ganache with its intense dark chocolate flavour reveals notes of plant matter, citrus, red berries and spices, rounded off by a delicate bitterness. A true ode to chocolate lovers.
Available as individual portions, and for collection from the Infiniment Chocolat shop on Fridays, Saturdays and Sundays only.
