Pierre Hermé plays a festive score. Pieces of candied orange infuse their sunny fragrance into the buttery brioche dough, each bite of which reveals generous pieces of chestnut. In contrast to the softness of the pastry, the delicately meringue crust is sprinkled with crunchy almonds.
