A creation that undulates to the sensual rhythm of the tango, where fruit and chilli make a pas de deux, then embrace the pure, precise, milky note of parmesan. The liveliness of the raspberry is sublimated by the bell pepper, which highlights its facets, while the lactic and salty aromas of the parmesan counterpoint the fruit's acidity. As for the sesame seeds in the pastry, they act as intermediaries with the parmesan tuile, summoning up the emotions in the frenzied rhythm of this unlikely trio for a tasting of shifting chords.
