Pierre Hermé imagines a tart in which the fruity trail of the Solliès fig, raw and cooked, is illuminated by the acidic and lively intensity of the raspberry. The delicate scent of Ceylon cinnamon with its floral notes creeps into the almond cream like a hyphen, revealing the flavors of this tart whose crisp pastry contrasts with the melt-in-the-mouth filling.
Available in sharing serving sizes for 4 or 8 people as well as in individual serving size.
